Ingredients

  • semolina1/2 cup
  • milk1 cup
  • sugar1/4 cup
  • ghee3 tbsp
  • cardamom1/4 tsp, powder
  • nuts2 tbsp, chopped

Method

  1. Soak the semolina

Mix the semolina with the milk and let it sit for 10 minutes until it thickens slightly. This soak softens the grains so the bites bake smooth and moist inside instead of staying gritty or dry in the centre.

  2. Mix the batter

Stir in the sugar, ghee, cardamom and chopped nuts until everything is well combined. The ghee keeps the halwa rich and tender, while the nuts add crunch, so spread them evenly for a bit of texture in every bite.

  3. Fill the mould

Spoon the mixture into a greased silicone mini mould, filling each cup two-thirds full. Greasing helps the set bites pop out cleanly, and leaving room at the top gives them space to rise a little without spilling over.

  4. Air fry

Air fry at 160°C for 14 min until the bites are set firm and lightly golden on top. Keep the heat gentle, because a low, steady temperature cooks the centres through without drying the edges or browning them too fast.
