Ingredients

  • Rolled oats1 cup
  • Mixed boiled veg1.5 cups
  • Boiled potato1
  • Ginger-green chilli paste1 tsp
  • Garam masala1 tsp

Method

  1. Toast and powder oats

Dry-roast the oats for a couple of minutes, then coarsely grind half of them into a powder. The powder binds the mix while whole oats add bite.

  2. Mash the base

Mash the boiled potato and mixed veg together, then mix in the ginger-chilli paste, garam masala and salt. Taste and adjust before adding oats.

  3. Bring it together

Fold in the ground and whole oats until the mixture is firm enough to shape. Rest it for 10 minutes so the oats absorb moisture and firm up.

  4. Shape and crumb

Form round patties and roll each in a little extra oats or breadcrumbs for crunch. Press the crumbs in gently so they stick during cooking.

  5. Brush with oil

Lightly brush both sides of each cutlet with oil for an even golden crust. A spray bottle gives the lightest, most uniform coat.

  6. Air-fry until crisp

Air-fry at 190C for 14 minutes, turning once halfway, until both sides are firm and golden. Serve hot with mint chutney.
