Ingredients
- button mushrooms8 large
- paneer1/2 cup, crumbled
- capsicum1/4 cup, finely chopped
- grated cheese2 tbsp
- black pepper1/4 tsp
- olive oil1 tsp
Method
Clean
Wipe the mushrooms clean with a dry cloth and twist out the stems to leave neat cups. Avoid washing them under the tap, as mushrooms soak up water like a sponge and that steam later stops them from browning nicely.
Mix Filling
Combine the crumbled paneer, finely chopped capsicum, grated cheese and black pepper in a bowl with a pinch of salt. Crumble the paneer small so the filling packs tightly and does not tumble out of the caps as they cook.
Stuff
Spoon the filling into each mushroom cap and press it down gently so it stays put. Brush the outside of the caps with a thin film of olive oil, which helps them brown and stops the skins from drying out.
Arrange
Set the stuffed mushrooms upright in a single layer in the basket, filling side up, so the cheese stays in the cup. Keep them level and slightly apart so the hot air can flow around each one for even cooking.
Air Fry
Air fry at 180°C for 10 min until the mushrooms are tender and the tops are melted and golden. If they release a little water into the basket, that is normal. Let them stand a minute before lifting so the filling settles.
