Ingredients
- besan1 cup
- curd3/4 cup
- grated carrot1/4 cup
- coriander leaves2 tbsp, chopped
- turmeric powder1/4 tsp
- saltto taste
Method
Make the batter
In a bowl, whisk the besan, curd, grated carrot, coriander leaves, turmeric and salt into a smooth, thick batter with no lumps. Whisking well now traps tiny air pockets that help the squares bake light rather than dense.
Rest the batter
Let the batter rest for 10 minutes so the besan soaks up the curd and loses its raw, bitter smell. Resting also thickens the mix a little, which gives you cleaner edges when you cut the baked squares.
Pour into the dish
Grease a small square baking dish that fits your basket and pour the batter in. Spread it level with the back of a spoon so it bakes to an even thickness and every square cooks at the same rate.
Air fry and cut into squares
Air fry at 175°C for 15 min until the top is set and a skewer poked into the middle comes out clean. Let it cool for a few minutes before cutting, as warm besan is soft and tears if you slice it too soon.
