Ingredients
- rolled oats1.5 cups
- ripe banana1, mashed
- honey2 tbsp
- peanut butter2 tbsp
- raisins1/4 cup
- cinnamon powder1/4 tsp
Method
Mix
Mix the mashed banana, honey and peanut butter in a bowl, then fold in the oats, raisins and cinnamon. Mashing the banana really smooth first helps it bind the oats so the cookies hold together and do not crumble.
Shape
Scoop portions onto a parchment-lined tray and flatten each gently into a cookie round. These cookies do not spread as they bake, so shape them now to the size and thickness you want them to finish.
Arrange
Place the cookies in the air fryer basket, leaving a little space between each one. The gaps let hot air move around every cookie, so they firm up and colour evenly rather than staying pale in the middle.
Air Fry
Air fry at 160°C for 12 min until set and golden at the edges. Let them cool on the tray for a few minutes, since they firm up as they cool and would break if lifted while still hot.
