Ingredients
- tortilla2
- paneer150 g, crumbled
- onion1 small, chopped
- tomato1 small, chopped
- turmeric1/4 tsp
- coriander leaves2 tbsp, chopped
Method
Season the paneer
Crumble the paneer into a bowl and add the chopped onion, tomato, turmeric and salt, then mix well. Crumbling by hand keeps the pieces soft and uneven, which gives the filling a nice homemade texture.
Air fry the bhurji
Spread the paneer mix in a small air-fryer-safe tray and air fry at 170°C for 6 min, stirring once, until the onion softens and it heats through. Stirring stops the edges drying out before the middle warms.
Fill and roll
Lay the tortilla flat, spoon the paneer bhurji in a line down the centre and scatter over the coriander, then roll it up tight. Keep the filling off the edges so it does not spill out while it crisps.
Crisp the wrap
Set the wrap seam-side down in the basket and air fry at 180°C for 8 min, turning once, until golden and crisp. Seam-side down first seals the join with heat so the wrap holds shut and does not unroll.
