Ingredients

  • rolled oats1.5 cups
  • banana2 medium, mashed
  • chopped nuts2 tbsp
  • cinnamon powder1/4 tsp

Method

  1. Mix the dough

Mash the bananas until smooth with no lumps, then stir in the rolled oats, chopped nuts and cinnamon powder to a thick dough. Ripe, spotty bananas mash easily and add natural sweetness, so you need no sugar.

  2. Rest the dough

Let the dough rest for 10 minutes so the oats drink up the banana moisture and swell. This resting step firms a wet mix into a scoopable dough, so the cookies hold their shape instead of spreading.

  3. Shape the cookies

Line the basket with parchment paper, then scoop small portions and flatten each into a round. These cookies do not spread much, so shape them as you want them now, and keep them the same thickness to cook evenly.

  4. Air fry until golden

Air fry at 160°C for 12 min until golden brown and firm on the outside. Leave them in the basket for a few minutes after, as they are soft when hot and set as they cool for a clean lift-off.
