Ingredients
- tortilla2
- cheese3/4 cup grated
- bell pepper1/2 cup diced
- onion1/4 cup diced
- oil1 tsp
Method
Fill
Scatter the cheese, diced bell pepper and onion over one half of each tortilla, leaving a clear border at the edge. The bare border gives you room to fold and press, so the filling does not squeeze out.
Fold
Fold each tortilla over into a half-moon and press the open edge down gently. Pressing seals the filling inside and helps the melting cheese glue the two halves together so the quesadilla stays shut.
Brush
Wipe a thin film of oil over both sides of each folded tortilla. A light, even coat of oil is what turns the surface crisp and evenly golden rather than leaving it dry, pale and leathery.
Secure
Rest the quesadillas flat in the basket in a single layer. If your air fryer has a strong fan, weigh them down with a small trivet so the hot air does not lift the top and unfold them mid-cook.
Air fry
Air fry at 180°C for 8 min, turning once, until the tortillas are crisp and golden and the cheese has melted inside. Let each one rest for a minute before cutting, so the filling sets and does not spill.
