Ingredients
- Bread slices4
- Boiled mashed potato1 cup
- Onion & capsicum, chopped1/2 cup
- Turmeric & red chilli powder1 tsp
- Coriander leaves2 tbsp
Method
Make the masala mash
Mash the boiled potato while still warm and fold in the chopped onion, capsicum, turmeric, chilli powder and salt. Add coriander leaves and a squeeze of lemon for brightness.
Spread thickly
Press the spiced mash firmly onto each bread slice, taking it right up to the edges so the corners crisp evenly. A thicker layer in the centre keeps the toast moist.
Brush the bread
Lightly brush the bare underside of each slice with a few drops of oil or melted butter for an even golden base. This stops the bread drying out during the bake.
Preheat
Run the air fryer empty for 3 minutes so the basket is hot when the toast goes in. A preheated basket gives that instant crunch on contact.
Air-fry to golden
Arrange the slices masala-side up in a single layer and air-fry at 180C for 10 minutes until the edges are crisp and the topping is set. Serve hot with green chutney or ketchup.
