Ingredients

  • tortilla2
  • paneer100 g, cubed
  • spinach1 cup, chopped
  • onion1 small, chopped
  • cumin powder1/2 tsp
  • cheese2 tbsp, grated

Method

  1. Season the filling

In a bowl, toss the paneer cubes, chopped spinach, onion and cumin powder with a little salt and oil. The oil helps the spinach wilt and lets the paneer edges catch a light golden colour.

  2. Air fry the filling

Spread the mix in the basket and air fry at 180°C for 6 min, shaking once, until the spinach wilts and the paneer turns light golden at the edges. Cooking the filling first keeps the wrap from going soggy.

  3. Fill the tortilla

Lay the tortilla flat and spoon the paneer and spinach filling down the centre. Sprinkle over the cheese and roll it up tightly. A tight roll holds together and stops the filling falling out.

  4. Crisp the wrap

Place the wrap seam side down in the basket and air fry at 180°C for 8 min, turning once, until golden and firm. Seam side down first seals the join so the wrap does not open up as it heats.
