Ingredients

  • puff pastry1 sheet
  • spinach1 cup
  • cheese1/2 cup
  • garlic2 cloves
  • olive oil1 tsp

Method

  1. Filling

Chop the spinach and garlic finely, then mix them with the cheese and olive oil in a bowl. Chopping small spreads the filling evenly so it does not clump, and squeezing out any wet spinach keeps the pastry from turning soggy.

  2. Roll

Spread the filling over the puff pastry in a thin, even layer, then roll it into a tight log and slice into rounds about 2 cm thick. A tight roll keeps the spiral neat so the layers hold together as they bake.

  3. Arrange

Place the rounds flat in a lined basket with space between them. The gaps let the pastry puff and the hot air reach the sides, so each pinwheel rises and browns evenly instead of steaming into its neighbour.

  4. Air fry

Air fry at 180°C for 14 min until the pastry is cooked through, golden and the layers have opened up. Keep them in a single layer so the hot air lifts each flaky layer and crisps the pinwheels all the way through.
