Ingredients
- semolina1 cup
- curd3/4 cup
- grated carrot1/4 cup
- coriander leaves2 tbsp, chopped
- green chili1, finely chopped
- saltto taste
Method
Make the batter
In a bowl, mix the semolina, curd, grated carrot, chopped coriander, green chili and salt into a thick batter. Let it rest for 10 minutes so the semolina swells and the mixture firms up enough to hold a shape.
Rest and thicken
Give the rested batter a final stir to check its texture. It should be thick enough to hold its shape softly when spooned, so stir in a little more semolina if it still looks runny.
Shape the bites
Grease a silicone mould tray and spoon the batter into each cavity, filling about half full. The semolina swells and rises as it cooks, so half-full moulds stop the bites overflowing the tray.
Air fry until cooked
Air fry at 180°C for 12 min until the bites are golden on top and spring back when pressed lightly. That gentle spring tells you the centre has set and the bites are cooked right through.
