Ingredients
- semolina1 cup
- curd1/2 cup
- onion2 tbsp, finely chopped
- carrot2 tbsp, grated
- mustard seeds1/2 tsp
- saltto taste
- oil1 tsp
Method
Rest the batter
Mix the semolina with the curd and a little water into a thick, smooth batter with no lumps. Rest it for 10 minutes so the grains drink the liquid and swell, which gives a soft, even crumb once baked.
Add vegetables
Stir in the chopped onion, grated carrot, mustard seeds and salt, mixing well. Fold gently so the batter stays thick, since a runny mix spreads too thin and bakes into a dry, hard slab.
Spread in tray
Pour the batter into a greased shallow tray, about 1.5 cm deep, and smooth the top with a spoon. An even layer cooks through at one pace so the middle sets while the edges stay tender.
Air fry and cut
Air fry at 190°C for 15 min until the top looks dry and firm with no wet centre. Let it cool a little before cutting into bite sized squares, so the pieces hold their shape instead of crumbling.
