Ingredients

  • Ready bun dough or pizza dough300 g
  • Boiled potato & peas1 cup
  • Onion & ginger, chopped1/3 cup
  • Garam masala & turmeric1 tsp
  • Milk for brushing2 tbsp

Method

  1. Prepare the filling

Saute the onion and ginger, then add mashed potato, peas, turmeric, garam masala and salt. Cook until dry so the filling does not leak through the dough.

  2. Divide the dough

Portion the dough into equal balls and flatten each into a small disc. Keep the centre slightly thicker so the seam does not tear when stuffed.

  3. Stuff and seal

Place a spoon of filling in each disc, gather the edges over the top and pinch firmly to seal. Roll between your palms into a smooth ball, seam-side down.

  4. Proof briefly

Let the stuffed buns rest for 10 minutes so the dough relaxes and puffs slightly. This gives a softer, fluffier crumb after baking.

  5. Brush the tops

Brush each bun with a little milk for a glossy golden finish. Place them in the basket with space between so they have room to rise.

  6. Air-fry until golden

Air-fry at 175C for 15 minutes until the buns are puffed and golden brown on top. Cool a few minutes before serving so the filling settles.
