Ingredients

  • idli6, leftover steamed, halved
  • mustard seeds1/2 tsp
  • curry leaves8
  • sesame seeds1 tsp
  • oil1 tbsp
  • turmerica pinch

Method

  1. Halve the Idlis

Cut the leftover steamed idlis in half to open up the soft inside. The exposed cut face dries and crisps in the hot air, while a whole idli would only warm through and stay uniformly soft.

  2. Toss in Tempering

Toss the idli halves with the oil, mustard seeds, curry leaves, sesame seeds and a pinch of turmeric until evenly coated. The oil carries the spices onto every piece and helps the cut sides brown into a golden crust.

  3. Arrange in Basket

Lay the pieces cut side up in a single layer in the basket, keeping them apart. Facing the cut side to the heat crisps it best, and the gaps let hot air circulate so they brown rather than steam.

  4. Air Fry Until Crisp

Air fry at 190°C for 8 min, shaking the basket once so they colour on all sides. They are ready when the edges are golden and crisp while the centres stay soft and fluffy inside.
