Ingredients
- besan1 cup
- water3/4 cup
- onion1 small, finely chopped
- green chilli1, finely chopped
- coriander leaves2 tbsp, chopped
- turmeric1/4 tsp
- ajwain1/4 tsp
- oil sprayfor greasing
Method
Whisk the batter
Whisk the besan, water, turmeric, ajwain and salt into a smooth batter with no lumps, about as thick as pouring cream. Beating out the lumps now gives an even set, then stir in the onion, green chilli and coriander leaves.
Fill the molds
Grease small silicone or metal muffin cups with a little oil spray, then pour in the batter until each cup is about half full. Leaving them half full gives the chillas room to rise and set without spilling over the edges.
Par-set
Put the filled cups in the basket and air-fry at 160°C for 6 min until the tops look dry and just set but still pale. This gentle first cook firms the batter enough to turn out cleanly, so it holds together for the crisping stage.
Crisp and finish
Turn the chillas out, brush the tops with a little oil, and air-fry at 180°C for 8 min, flipping once, until both sides are golden and firm with no wet batter inside. Brushing on the oil is what gives them a crisp, even golden shell.
