Ingredients
- besan1 cup
- paneer1/2 cup, crumbled
- onion2 tbsp, chopped
- green chilli1, chopped
- cumin seeds1/2 tsp
- saltto taste
- oil1 tsp
Method
Make the batter
Whisk the besan with water into a smooth, lump-free batter of medium thickness and rest it for 10 minutes. Resting lets the besan hydrate fully, so the cheela cooks even and does not taste raw or gritty.
Add paneer and spices
Stir in the crumbled paneer, chopped onion, green chilli, cumin seeds and salt just before cooking. Adding the paneer at the end keeps its soft bits whole rather than breaking them into the batter.
Pour into tray
Grease a shallow air-fryer tray and pour in a thin, even layer of batter. A thin, level pour cooks through evenly, so the cheela sets right to the middle instead of staying wet in the centre.
Cook until golden
Air fry at 180°C for 13 min, then flip and cook a further 3 min. Turning it once browns both sides evenly. It is done when the cheela is golden and firm with no wet centre.
