Ingredients

  • Bread slices4
  • Boiled potato, sliced1
  • Tomato & cucumber slices1/2 cup
  • Green chutney3 tbsp
  • Chaat masala & butter2 tbsp

Method

  1. Butter and chutney

Butter the inner faces of all the slices, then spread a generous layer of green chutney over two of them. The butter on the outside crisps in the basket, while the chutney inside carries the tangy Bombay flavour.

  2. Layer the fillings

Arrange thin slices of boiled potato, tomato and cucumber across the chutney base. Sprinkle chaat masala over the vegetables for that street-stall taste, and keep the layers thin so the toast stays easy to crisp.

  3. Close and butter outside

Top with the remaining slices and lightly butter the outer faces so they brown into a crisp golden shell. Press the sandwich gently with your palm so it holds together and does not open up in the basket.

  4. Secure if needed

If your basket has strong airflow, push a toothpick through each sandwich so the top slice cannot lift and flap in the fan. Remember to pull the toothpicks out before serving so no one bites down on one.

  5. Air-fry until golden

Air-fry at 190C for 9 min, flipping once halfway, until both faces are crisp and golden brown. Cut each sandwich diagonally and serve hot with a little extra green chutney on the side.
