Ingredients
- Puff pastry or flour sheet1 sheet
- Spiced potato-pea filling1.5 cups
- Cumin & coriander seeds1 tsp each
- Amchur & garam masala1 tsp
- Green chillies2
- Oil for brushing1 tbsp
Method
Make the samosa filling
Crush the cumin and coriander seeds and toss the boiled potato-pea mix with them, amchur, garam masala, green chilli and salt. Keep the filling fairly dry so the pinwheels stay crisp and do not turn pasty.
Spread and roll
Roll out the pastry sheet thin and spread an even layer of filling to the edges. Roll it into a tight log from one end, pressing gently so the spiral holds together.
Slice the pinwheels
Chill the log fifteen minutes to firm it, then slice into rounds about two centimetres thick with a sharp knife. Lay each pinwheel flat so the spiral pattern faces up.
Brush with oil
Brush the tops and edges lightly with oil for a glossy, even bake. A thin coat is enough to coax out the flaky layers.
Air-fry the spirals
Arrange the pinwheels in a single layer with gaps and air-fry at 180C for 15 minutes, flipping once, until puffed and deep gold. Serve hot with tamarind and mint chutneys.
