Ingredients
- quinoa1 cup, cooked
- egg white1
- zucchini1/2 cup, grated
- spring onion2 tbsp, chopped
- breadcrumbs1/4 cup
- salt and pepperto taste
Method
Prepare the mixture
In a bowl, mix the cooked quinoa, egg white, grated zucchini, chopped spring onion, breadcrumbs, salt and pepper until well combined. The egg white and breadcrumbs act as the binders that hold these loose patties together.
Rest the mixture
Let the mixture sit for 5 minutes before shaping. Resting gives the breadcrumbs time to soak up the moisture from the quinoa and zucchini, so the mix firms up and the patties hold their shape instead of falling apart.
Shape the patties
Divide the mixture into four equal portions and press each into a round patty about half an inch thick. Keeping them the same size and thickness means they cook through evenly at the same rate in the basket.
Air fry until firm
Place the patties in the basket and mist them lightly with oil, then air-fry at 180°C for 14 min, flipping halfway, until golden. They are cooked when the centre is set and firm with no wet mixture left inside.
