Ingredients
- Bread slices4
- Eggs3
- Onion & tomato, chopped1/2 cup
- Pav bhaji masala1/2 tsp
- Butter1 tbsp
- Coriander & saltto taste
Method
Make the bhurji
Melt the butter in a pan and saute the onion and tomato until soft. Add pav bhaji masala and salt, then pour in the beaten eggs and scramble on low heat until just set but still moist.
Finish with herbs
Stir in chopped coriander and take the bhurji off the heat. Keeping it slightly underdone here means it stays soft after the bread crisps in the air fryer.
Top the bread
Lightly butter one side of each slice and spread a thick layer of bhurji on the other side. Press it down so the masala grips the bread and does not slide off.
Arrange in the basket
Lay the slices buttered-side down in a single layer without overlapping. Crowding traps steam and leaves the toast soft instead of crisp.
Air-fry to crisp
Cook at 180C for 8 minutes until the undersides are deep golden and the edges crunch. Serve straight away while the contrast of crisp base and soft topping is at its best.
