Ingredients

  • oats3/4 cup
  • egg3
  • capsicum1/4 cup diced
  • cheese1/4 cup grated
  • salt1/2 tsp

Method

  1. Whisk the eggs

Whisk the eggs with the salt in a bowl until the yolks and whites are fully blended and a little frothy. Beating in some air helps the bake set light and even rather than dense, and the salt seasons it right through.

  2. Combine

Stir in the oats, diced capsicum and grated cheese, then let the mix rest for 5 minutes. The short rest lets the oats drink up some of the egg and swell, which gives the bake a firmer, more sliceable set.

  3. Fill the cups

Spoon the mixture into greased silicone cups and level the tops. Greasing them well is what lets the set bakes slip out cleanly later, and filling to the same level means they all cook through at the same rate.

  4. Air fry

Air fry at 175°C for 17 min until set firm in the centre and the egg is fully cooked. Press the top gently, and if it springs back with no wet wobble, the egg has cooked through and they are ready to lift out.
