Ingredients
- sprouted moong3/4 cup
- egg3
- onion1/4 cup diced
- tomato1/4 cup diced
- salt1/2 tsp
Method
Beat the eggs
Beat the eggs with the salt in a bowl until the yolks and whites are fully mixed. A good whisk works in a little air so the bake sets light and even rather than heavy and dense.
Stir in the moong
Add the sprouted moong, diced onion and tomato and mix well. Spreading them evenly through the egg means every cup has filling and the mix cooks at the same steady rate.
Fill the cups
Pour the mix into greased silicone cups, filling each about three quarters. The gap at the top gives the egg room to puff up as it cooks without spilling over the sides.
Air fry
Air fry at 175°C for 17 min until the egg is fully set and the top feels firm with no runny liquid. A firm, no-wobble centre means it is cooked through and safe to eat.
