Ingredients
- egg3
- paneer100 g crumbled
- onion1/4 cup diced
- tomato1/4 cup diced
- green chilli1 chopped
- salt1/2 tsp
Method
Beat the eggs
Beat the eggs with the salt in a bowl until the yolks and whites are fully blended. A good whisk beats in a little air, which helps the bake rise soft and light rather than dense and heavy.
Add the mix-ins
Stir in the crumbled paneer, chopped onion, tomato and green chilli so they are spread evenly through the egg. Spreading them out means every bite has filling and no plain patch of set egg.
Fill the moulds
Pour the mix into greased silicone moulds, filling each about three quarters full. Leaving headroom gives the egg space to puff up as it sets, so it does not spill over the sides while baking.
Air fry
Air fry at 175°C for 16 min until the egg is fully set with no runny white. Press the centre gently, and if it feels firm and springs back, it is cooked through and safe to eat.
