Ingredients

  • bagel2
  • egg2
  • cheese50 g
  • butter1 tbsp
  • chives1 tbsp

Method

  1. Prep the bagel

Slice each bagel in half and spread a thin layer of butter over the cut sides. The butter crisps the surface as it heats and adds flavour, and it also seals the bread a little so the egg sits on top instead of soaking straight in.

  2. Add the egg

Press the soft centre of each bagel half down with a spoon to hollow out a well, then crack one egg into each dip. The well holds the egg in place so it cooks on the bagel rather than running off the flat top.

  3. Top it

Scatter the grated cheese and chopped chives over the egg. Keep the cheese around the edge of the yolk rather than piled on top, so the white sets evenly and the cheese melts into a golden ring without smothering it.

  4. Air fry

Place the halves in the basket and air-fry at 175°C for 12 min until the egg is fully set and the cheese is melted and golden. Keep them level so the egg does not slide before it firms, and check the white is no longer runny before serving.
