Ingredients

  • cottage cheese1 cup
  • egg2
  • oats1/2 cup
  • spinach1/2 cup chopped
  • salt1/2 tsp

Method

  1. Mix the base

Whisk the eggs until smooth, then stir in the cottage cheese, oats, chopped spinach and salt. Whisking the eggs first traps a little air, which gives the baked muffins a lighter, softer crumb instead of a heavy, dense one.

  2. Rest

Let the batter sit for 5 min so the oats drink in some of the moisture and swell. This short rest thickens the mix, so the muffins hold their shape and are not wet or gummy in the middle.

  3. Fill the cups

Spoon the batter into greased muffin cups, filling each about three quarters full. Greasing well stops the egg sticking, and leaving headroom gives the muffins space to rise without spilling over the sides.

  4. Air fry

Air fry at 170°C for 18 min until the tops are set and lightly golden. They are done when a pick pushed into the centre comes out clean and the egg is fully set with no wet, runny batter left inside.
