Ingredients
- egg5
- milk3 tbsp
- cheese1/2 cup grated
- bell pepper1/2 cup diced
- onion1/4 cup diced
- salt1/2 tsp
Method
Whisk
Beat the eggs with the milk and salt until the yolks and whites are fully mixed and a little frothy. The milk and worked-in air keep the cups soft and light instead of dense and rubbery.
Fold
Stir in the diced bell pepper, onion and most of the cheese, keeping a little cheese back for the tops. Spreading the veg evenly means every cup has filling and sets at the same rate.
Fill
Lightly oil four to six silicone cups and pour in the mixture, leaving a little space at the top for the puff. Greasing well lets the set frittatas pop out cleanly without tearing.
Top
Scatter the reserved cheese over each cup so it melts and browns on top. A cheese lid gives a golden finish and seals in a little moisture as the eggs set underneath it.
Air fry
Air fry at 175°C for 13 min until the centres are set with no wobble and a knife slid in comes out clean. A firm, dry centre means the egg is cooked all the way through.
