Ingredients
- flour1 cup
- milk3/4 cup
- egg1
- sugar2 tbsp
- baking powder1 tsp
- butter1 tbsp, melted
Method
Mix the batter
Whisk the flour, sugar, baking powder, milk, egg and melted butter into a smooth, lump-free batter. Let it rest for a couple of minutes so the flour drinks in the liquid, which gives you softer, fluffier bites.
Fill the mould
Grease a silicone mini muffin mould, then fill each cup only two-thirds full. Greasing helps the bites pop out cleanly, and the gap at the top leaves room for them to puff up without spilling over the edges.
Load the basket
Set the filled mould into the basket, leaving a clear gap around it so the hot air can circulate freely. Good airflow all round is what cooks the bites evenly and gives them a light, even golden top.
Air fry
Air fry at 170°C for 12 min until the bites are golden and spring back when pressed lightly in the centre. That bounce means the egg batter is set right through. Cool for a minute, then twist them out of the mould.
