Ingredients

  • flour200 g
  • egg3
  • cheese60 g
  • onion1
  • olive oil1 tbsp

Method

  1. Make the dough

Mix the flour with a pinch of salt and enough water to make a soft dough. Let it rest for ten minutes, then roll out two rounds. Resting relaxes the dough so it rolls thin without springing back and stays tender once baked.

  2. Beat and fill

Whisk the eggs and stir in the chopped onion, then spoon the mix onto one half of each round and scatter grated cheese over the top. Keep the filling to one side and away from the rim so you have a clean, dry edge to seal.

  3. Fold and seal

Fold each round over the filling and press the edge, then crimp it with a fork so it seals tightly. A firm seal keeps the egg inside as it puffs, and brushing the top with olive oil helps the crust turn golden and crisp.

  4. Air fry

Set the calzones in the basket and air-fry at 180°C for 16 min until the dough is golden and the egg filling is fully set inside. Give them space so the hot air crisps all sides, and check the centre is firm rather than wet before serving.
