Ingredients
- Thick bread slices4
- Milk1/2 cup
- Eggs2
- Cinnamon powder1 tsp
- Sugar & vanilla2 tbsp
Method
Whisk the custard
Beat the eggs, milk, sugar, cinnamon and vanilla in a wide, shallow bowl until fully blended. A wide bowl lets you lay each slice flat, so it soaks up the custard evenly instead of only at the edges.
Soak the bread
Dip each slice for about ten seconds a side, long enough to drink in the custard but not so long it turns to mush. Slightly stale, thick bread holds up best and soaks more cleanly than soft fresh slices.
Line and grease
Lay a sheet of parchment in the basket and brush it lightly with butter so the toast does not stick. Let the extra custard drip off each slice before you set it down, or the underside can steam rather than crisp.
Flip midway
Halfway through, turn each slice over carefully with a spatula so both sides colour the same. Brush a little butter on the freshly turned face to help it crisp into an even, golden caramel edge.
Air-fry till caramel-edged
Air-fry at 180C for 8 min, flipping once, until the surface is set and golden with no wet custard in the centre. Dust lightly with a little sugar and serve warm while the edges are still crisp.
