Ingredients
- prawns400 g
- ghee2 tbsp
- red chilli4
- tamarind1 tsp
- garlic4 cloves
- curry leaves1 sprig
Method
Make the masala
Grind the red chilli, tamarind, garlic and salt with a splash of water into a smooth paste. A little water helps it blend evenly so the masala coats every prawn instead of sitting in clumps.
Marinate the prawns
Toss the cleaned prawns with the masala paste and half the ghee until well coated. Rest for 15 min so the tangy, spicy paste soaks into the flesh for a deeper roast flavour.
Preheat and brush
Preheat the air fryer to 180°C. Spread the prawns in a single layer, brush them with the rest of the ghee and scatter the curry leaves on top so they crisp and perfume the prawns.
Air fry
Air fry at 180°C for 9 min, turning once, until the prawns turn pink and opaque and curl up firmly. That firm curl and even pink colour mean they are cooked through and ready.
