Ingredients
- minced chicken500 g
- breadcrumbs1/2 cup
- egg1
- onion1
- garlic3 cloves
- tomato paste2 tbsp
- salt1 tsp
Method
Mix the loaf
In a bowl combine the mince, breadcrumbs, egg, finely chopped onion, minced garlic and salt. Mix with a light hand only until it just comes together. Over-mixing packs the meat tight and makes the loaf dense instead of tender.
Shape the loaf
Press the mixture into a small loaf that fits your basket, keeping it about 5 cm thick and even end to end. A uniform thickness means the middle cooks through at the same time as the ends, with no raw centre.
Top with paste
Spread the tomato paste over the top in a thin even layer, then line the basket with foil. The foil catches the drips so they do not smoke, and the paste bakes into a glossy, tangy crust on the meat.
Preheat and load
Preheat the air fryer to 180°C for 3 minutes, then lower the loaf in gently on its foil sling. Starting in a hot basket sets the outside quickly so the loaf keeps its shape instead of spreading flat.
Air fry
Cook at 180°C for 25 min until the top is browned and the centre reaches 74°C with no pink mince left. Rest the loaf for 5 minutes before slicing so the juices settle and each slice holds together.
