Ingredients
- boneless chicken500 g, cubed
- thick yogurt3 tbsp
- cashew paste2 tbsp
- ginger garlic paste1 tbsp
- red chilli powder1 tsp
- garam masala1 tsp
- mustard oil1 tbsp
Method
Marinate
Mix the chicken cubes with the yogurt, cashew paste, ginger garlic paste, red chilli powder, garam masala and mustard oil. Cover and marinate for 1 hour in the fridge, so the yogurt tenderises the meat and the spices sink in.
Preheat
Preheat the air fryer to 185°C for 3 min. Starting with a hot basket sears the outside of the chicken the moment it goes in, which locks in the juices and helps the marinade dry into a browned coat.
Arrange
Place the marinated chicken pieces in a single layer in the basket, leaving space between each one. Crowding traps steam and makes the pieces pale and wet, while gaps let the hot air brown them all over.
Air fry
Air fry at 185°C for 16 min, shaking the basket every 5 min so the pieces colour on all sides, until the chicken is deeply browned and cooked through with no pink inside and juices that run clear.
