Ingredients
- fish fillet3 pieces
- tomato1 cup diced
- olives1/3 cup sliced
- garlic3 cloves minced
- lemon1 sliced
- oregano1 tsp
Method
Season the fish
Pat the fillets fully dry, then rub them with the garlic, oregano, a squeeze of lemon, and a pinch of salt. Drying the surface first helps the seasoning cling and stops the fish steaming in its own water.
Add the topping
Set the fillets in a small greased tin and scatter the diced tomato and olives over the top with a few lemon slices. The juicy topping bastes the fish as it cooks, keeping it moist and tender.
Slide it in
Place the tin in the basket and cook the fish gently so it stays soft and does not dry out. A steady, moderate heat lets it turn opaque all the way through without toughening the edges.
Bake and check
Air-fry at 190°C for 15 min until the fish turns opaque and flakes easily with a fork. Spoon the pan juices back over the fillets just before serving so they stay glossy and moist.
