Ingredients
- chicken thighs600 g bone-in
- lemongrass2 stalks finely chopped
- garlic4 cloves
- fish sauce2 tbsp
- brown sugar1 tbsp
- lime1
- red chilli1 sliced
Method
Make the marinade
Blend the lemongrass, garlic, fish sauce, brown sugar, lime juice and sliced red chilli into a coarse paste. Grinding the tough lemongrass fine is what lets its citrus aroma reach right into the meat.
Marinate the chicken
Rub the paste all over the thighs and push some of it under the skin as well. Cover and rest in the fridge for at least 1 hour, since the time under the skin is where the flavour really soaks in.
Arrange in the basket
Lay the chicken thighs skin side up in the basket with space between each piece. The gaps let hot air circle every thigh so the skin crisps up instead of steaming.
Air fry until cooked through
Air fry at 190°C for 20 min, turning halfway, until the skin is golden and crisp and the chicken reaches 74°C with clear juices at the thickest part of the thigh.
