Ingredients

  • boneless chicken thigh500 g, cubed
  • fresh cream3 tbsp
  • hung yogurt2 tbsp
  • ginger garlic paste1 tbsp
  • cardamom powder1/2 tsp
  • grated cheese2 tbsp
  • lemon juice1 tbsp

Method

  1. Marinate

Mix the chicken cubes with fresh cream, hung yogurt, ginger garlic paste, cardamom powder, grated cheese and lemon juice. Cover and chill for 2 hours. The thick creamy coat clings to the meat and keeps it juicy and tender as it cooks.

  2. Skewer

Thread the chicken pieces onto skewers, leaving small gaps between each cube. Those gaps let hot air flow around every side, so the pieces cook through and colour evenly instead of steaming where they touch.

  3. Preheat

Preheat the air fryer to 190°C for 3 min and lightly oil the basket. A hot basket sears the creamy coating on contact, giving colour at the edges while the inside stays soft and moist.

  4. Air fry

Place the skewers in the basket and air fry at 190°C for 14 min, turning once halfway, until the chicken is white and firm with no pink inside and lightly charred at the edges.
