Ingredients
- chicken breast450 g
- yogurt3 tbsp
- garlic3 cloves
- lemon juice1 tbsp
- paprika1 tsp
- olive oil1 tbsp
Method
Cut
Cut the chicken into even chunks about three centimetres wide so they all cook at the same rate. Pieces of one size finish together, so none stays raw in the middle while smaller bits turn dry.
Marinate
Mix the yogurt, grated garlic, lemon juice, paprika, oil and a pinch of salt. Coat the chicken and rest for 30 minutes. The yogurt and lemon tenderise the meat and hold the spices on so it browns deeply.
Thread
Thread the chunks onto skewers with small gaps between each piece. The gaps let hot air move all the way around every chunk, so they cook through evenly and colour on all sides instead of just the top.
Preheat
Set the air fryer to warm up at 185°C while you finish threading the skewers. A hot basket sears the surface the moment the chicken goes in, which locks in juices and starts the browning straight away.
Air fry
Cook at 185°C for 16 min, turning once, until the chicken is white all through with no pink at the centre and reaches 74°C. Cut into the biggest chunk to check; the juices should run clear.
