Ingredients

  • fish500 g
  • red chilli powder2 tsp
  • turmeric0.5 tsp
  • ginger garlic paste1 tbsp
  • tamarind1 tsp
  • rice flour2 tbsp
  • curry leaves1 sprig

Method

  1. Make the paste

Mix the red chilli powder, turmeric, ginger garlic paste, tamarind and salt into a thick paste. Keeping it thick helps it grip the fish, and the tamarind lifts the flavour while gently firming up the delicate flesh.

  2. Marinate the fish

Coat the fish fillets on both sides with the paste and rest for 15 minutes. A short rest is enough for a thin fillet to take the spice, and any longer in the salt and tamarind can start to soften the flesh too much.

  3. Dust and preheat

Preheat the air fryer to 180°C. Sprinkle the rice flour lightly over the marinated fish just before cooking. That thin, dry coat is what crisps into a light crust and stops the surface turning wet and sticky.

  4. Air fry

Air fry at 180°C for 12 min, turning once, until the fish is opaque all through and flakes easily with a fork. That clean flake at the thickest part is the sign it is cooked and ready to lift out.
