Ingredients
- minced mutton300 g
- chana dal, boiled100 g
- egg1
- ginger garlic paste1 tbsp
- green chilli1
- garam masala1 tsp
- oil1 tbsp
Method
Cook the base
Cook the minced mutton with boiled chana dal, ginger garlic paste and garam masala in a pot with a little water until the meat is tender and the water dries up. A dry mix binds far better than a wet one.
Grind
Cool the mixture slightly, then grind it to a coarse paste in a food processor and mix in the chopped green chilli. A coarse grind keeps a little bite while still holding the patties together.
Shape
Add the egg to bind the mixture, then shape it into flat round patties about 6 cm wide. The egg is what holds the kebabs together so they do not split open in the basket.
Air fry
Preheat the air fryer to 185°C. Brush the patties with oil on both sides and lay them in the basket in a single layer. Air fry at 185°C for 14 min, flipping halfway, until golden brown and cooked through with no pink inside.
