Ingredients
- crab meat300 g
- breadcrumbs1/2 cup
- egg1
- mayonnaise2 tbsp
- spring onion2 tbsp, chopped
- mustard paste1 tsp
- black pepper1/2 tsp
Method
Mix the filling
Gently fold the crab meat with the breadcrumbs, egg, mayonnaise, spring onion, mustard paste and black pepper. Mix lightly with a fork so the crab stays in soft flakes, as over-mixing makes the cakes heavy and mushy.
Shape the patties
Divide the mixture into six equal portions and shape each into a flat, even patty. Keeping them the same size and thickness means they all cook through at the same rate, so none are raw while others overcook.
Chill the patties
Lay the patties on a plate and chill them for 15 min before cooking. Chilling firms up the egg and breadcrumbs so the cakes hold together in the basket and do not slump or break when you flip them.
Air fry
Spray the patties lightly with oil, set them in a single layer and air fry at 190°C for 12 min, flipping halfway. They are done when golden brown, firm to the touch and hot right through the centre, cooked with no pink before serving.
