Ingredients

  • prawns500 g peeled and deveined
  • garlic3 cloves
  • red chilli1 chopped
  • lime1
  • fish sauce1 tbsp
  • coriander2 tbsp chopped
  • black pepper1 tsp

Method

  1. Marinate the prawns

Toss the prawns with the crushed garlic, chopped chilli, lime juice, fish sauce and black pepper, then rest for 15 minutes. The lime and the salt in the fish sauce season the prawns right through.

  2. Arrange in the basket

Spread the prawns in a single layer in the basket, not overlapping. Overlapping prawns cook unevenly and steam each other soft, while a single layer lets them firm up and colour at the edges.

  3. Air fry until nearly opaque

Air fry at 200°C for 6 min, shaking the basket halfway. Shaking moves the prawns around so they cook at the same pace, since prawns turn from grey to pink and firm up very fast in dry heat.

  4. Check and finish

Air fry at 200°C for 2 min, until the prawns are opaque and firm all the way through. Scatter the coriander before serving. Pull them as soon as they curl and firm so they stay juicy.
