Ingredients
- bread6 slices
- chicken200 g (cooked, shredded)
- egg2 (boiled, sliced)
- lettuce4 leaves
- tomato1 (sliced)
- mayonnaise3 tbsp
- butter2 tbsp (softened)
- black pepper1/4 tsp
Method
Prep the fillings
Toss the cooked shredded chicken with the mayonnaise and black pepper until creamy. Keep the boiled egg slices, lettuce and tomato ready to hand, since building the sandwich quickly stops the toast going cold.
Butter and toast the bread
Butter one side of each bread slice. Set all six slices in the basket buttered side up and air fry at 180°C for 4 min until lightly golden. The butter helps them crisp so the layers do not go soggy.
Build the layers
On two toasted slices, layer lettuce, tomato and the chicken mix. Add a second slice, then egg slices and more lettuce, and close with the third slice buttered side up. Keeping wet fillings off the bread edges stops sliding.
Warm and serve
Return the stacked sandwiches to the basket and heat at 180°C for 3 min so the chicken filling is hot right through the centre, at least 74°C. Pin each with toothpicks, cut into quarters and serve.
