Ingredients
- chicken breast300 g
- yogurt3 tbsp
- tikka masala paste2 tbsp
- taco shells6 pieces
- capsicum1 medium
- onion1 medium
- lemon juice1 tbsp
Method
Marinate the chicken
Cut the chicken breast into bite size pieces. Mix with the yogurt, tikka masala paste and lemon juice, then cover and rest for 20 minutes. The yogurt and lemon soften the meat so it stays tender and takes on colour.
Air fry the tikka
Place the chicken pieces in the basket in a single layer. Air fry at 190°C for 12 minutes, shaking the basket once, until the centre reaches 74°C and the juices run clear. Spacing them out helps the edges brown.
Char the vegetables
Toss the capsicum and onion slices with a little oil. Air fry at 190°C for 5 minutes until they are slightly charred and soft. The oil helps them catch colour fast, and the char adds a smoky note to the filling.
Assemble the tacos
Fill each taco shell with the chicken tikka, charred vegetables and a drizzle of yogurt. Do not overfill; a lighter load lets the shell stay open and crisp up all over in the next step instead of turning soft.
Crisp the tacos
Stand the filled tacos upright in the basket and air fry at 180°C for 3 min until the shells are crisp and the filling is heated through. Keeping them upright stops the filling spilling and crisps both sides evenly.
