Ingredients
- chicken thigh500 g boneless
- cornflour3 tbsp
- garlic powder1 tsp
- sweet chilli sauce4 tbsp
- soy sauce1 tbsp
- sesame seeds1 tsp
- spring onion2 chopped
Method
Cut and coat the chicken
Cut the chicken thigh into bite sized pieces and toss with the cornflour and garlic powder until evenly coated. A thin, even cornflour layer is what crisps up into a light, crunchy shell.
Arrange in the basket
Spread the chicken pieces in a single layer in the basket and spray lightly with oil. Space between the pieces lets the hot air reach all sides so they crisp instead of steaming together.
Air fry until crisp
Air fry at 200°C for 14 min, shaking the basket halfway, until the pieces are golden and crisp on the outside. Shaking moves them around so every side browns evenly.
Toss in the glaze
Warm the sweet chilli sauce and soy sauce together, then toss the hot chicken in the glaze until fully coated. Coating while hot helps the sticky glaze cling to the crisp surface.
Finish and check doneness
Return the glazed chicken to the air fryer at 200°C for 2 min to set the glaze. The chicken is done when it reaches 74°C inside with no pink and the juices run clear.
