Ingredients
- minced mutton400 g
- onion1/2 cup grated
- garlic3 cloves minced
- coriander1/3 cup
- cumin1 tsp
- yogurt1/3 cup
Method
Mix the kofta
Squeeze the excess water from the grated onion, then mix it with the mince, garlic, coriander, cumin and a pinch of salt. Dry onion is key, because extra water makes a loose mix that will not hold its shape on the skewer.
Shape the logs
Press the mix firmly into small logs around wooden skewers or into oval patties, then chill for 10 min to firm up. Packing it tightly and chilling helps the koftas hold together and stops them sliding off as they cook.
Space them out
Lay the koftas in a single layer in the basket with a gap between each one. The space lets hot air circle every side so they brown evenly all over instead of steaming and staying pale where they touch.
Crisp and check
Air fry at 190°C for 16 min, turning halfway, until browned outside with clear juices and no pink in the centre. Cutting into the thickest kofta is the surest test. Serve with sliced onion and yogurt.
