Ingredients
- chicken breast2
- cheese4 slices
- ham4 slices
- breadcrumbs1 cup
- egg2
- flour3 tbsp
- salt1 tsp
Method
Butterfly
Slice each chicken breast open like a book and pound it flat to about 1 cm thick. An even thickness means the roll cooks through at the same rate. Season lightly with salt on both sides before filling.
Fill and roll
Lay a slice of ham and cheese on each cutlet, leaving a clear border so the filling does not squeeze out. Roll up tightly from one end into a firm log and secure the loose seam with a toothpick.
Coat
Roll each bundle in the flour, then the beaten egg, then the breadcrumbs, pressing well so the whole roll is covered. This three-step coat forms a crisp golden crust that seals the cheese inside. Spray with oil.
Preheat
Preheat the air fryer to 185°C and place the rolls seam-side down in a single layer. Setting them seam-side down helps the join stay closed as it cooks, so the melting cheese does not leak out.
Air fry
Air fry at 185°C for 18 min, turning once so the crust browns all over. It is done when the coating is golden and crisp and the chicken reaches 74°C at the centre with no pink and clear juices.
