Ingredients
- chicken breast500 g
- peanut butter3 tbsp
- soy sauce2 tbsp
- garlic3 cloves
- lemongrass1 stalk
- turmeric powder1 tsp
- lime1
Method
Marinate the chicken
Cut the chicken breast into thin strips. Mix peanut butter, soy sauce, crushed garlic, finely chopped lemongrass, turmeric and a squeeze of lime juice, then coat the chicken well. Rest for 30 minutes so the flavour soaks in and the meat stays moist.
Thread the skewers
Thread the marinated strips onto skewers in a loose ribbon shape, weaving over and under. Leave the ends free to hold. The gentle folds let hot air reach every side, so the strips cook and brown evenly.
Arrange in the basket
Place the skewers in the basket in a single layer with space between each one, then spray lightly with oil. Crowding traps steam, so a little gap keeps the surface dry and helps the edges catch a light char.
Air fry until cooked through
Air fry at 200°C for 12 min, turning halfway, until the chicken is golden with a light char and the juices run clear. Thin strips cook fast, so check the thickest piece is white through with no pink.
