Ingredients

  • minced lamb400 g
  • parsley3 tbsp
  • onion1 small
  • garlic2 cloves
  • coriander powder1 tsp
  • salt1 tsp

Method

  1. Combine

Finely chop the onion and parsley, then mix them into the minced lamb with the grated garlic, coriander powder and salt. Chopping fine means the seasonings spread evenly through every bite of the kofta.

  2. Knead

Work the mixture firmly with your hands for a couple of minutes until it turns smooth and sticky. This kneading builds the bind that holds the koftas together so they do not fall apart in the heat.

  3. Form

Divide the mix into six equal portions and mould each one into a sausage shape around a skewer. Keeping them even in thickness means they all cook through at the same time.

  4. Chill

Rest the shaped koftas in the fridge for 10 minutes to firm up the fat and help them set. A chilled kofta keeps its shape and stays wrapped tight on the skewer while it cooks.

  5. Air fry

Cook at 190°C for 17 min, turning once halfway for even colour. They are done when browned on the outside and no longer pink inside at 74°C, with the juices running clear.
