Ingredients
- squid rings400 g
- flour3 tbsp
- egg1
- breadcrumbs1 cup
- red chilli flakes1/2 tsp
- lemon1
Method
Pat the squid dry
Pat the squid rings dry with a paper towel before coating. A dry surface lets the flour grip so the crumb coating holds on and turns crisp instead of sliding off in the basket.
Set up the coating
Dust the rings with the flour, dip in the beaten egg, then coat in the breadcrumbs mixed with chilli flakes. The flour and egg give the crumbs something to cling to for an even, crunchy shell.
Arrange in the basket
Spread the rings in a single layer, not touching, and spray lightly with oil. Space between them lets the hot air circulate so each ring crisps rather than steaming and going soft.
Air fry
Air fry at 200°C for 6 min, shaking the basket once. Squid cooks fast and is done as soon as it turns white and opaque and the crumb is golden. Do not leave it longer or it turns rubbery. Serve with lemon wedges.
