Ingredients
- chicken500 g
- soy sauce2 tbsp
- ginger1 tbsp
- garlic2 cloves
- cornflour5 tbsp
- egg1
Method
Marinate
Cut the chicken into bite-size pieces and mix with the soy sauce, grated ginger, chopped garlic and beaten egg. Rest for 15 minutes so the marinade flavours the meat and the egg helps the coating cling.
Dredge
Lift each piece from the marinade and toss it in the cornflour until fully coated, then shake off the excess. A dry, even cornflour layer is what fries up light and crisp instead of thick and doughy.
Air fry
Spread the pieces out in a single layer with gaps between them and spray lightly all over with oil. The gaps let the hot air reach every side and the oil helps the cornflour crust turn deep golden and crisp.
Finish
Air fry at 195°C for 18 min, turning once, until the pieces are golden and crisp. Cut the largest piece open to check the juices run clear and there is no pink at the centre before serving.
